Domaine Saint Nicolas 

Our wines

The quality of a terroir by the sea, the result of working as closely as possible to the environment, our cuvées are the fruit of an exceptional terroir.

The whites and rosés undergo pneumatic pressing and vinification in stainless steel vats for our mid-range cuvées and in casks for our "plot" cuvées, while the red wines are vinified in wooden casks and the terroir cuvées in barrels.

In the end, the cuvées produced on the estate are fruity, balanced and refreshing while the wines for aging are full and concentrated.






From an assembly of chenin and gray grolleau; The wine has a pale robe with silver reflections.

The nose is expressive with notes of vine peaches and orange peel

Soft and delicate mouth with a salivating finish.

Pure chardonnay, wine with aromas of slightly toasted brioche, hawthorn, honeysuckle and citrus. Palate with incredible and invigorating tension, with complex flavors. the finish is persistent and slightly saline.

Made from a blend of chenin blanc and chardonnay, this wine has iodized notes as well as aromas of white flowers. On the palate, a wine of great tension is revealed, with salty flavors and a fine bitterness.

With Vendée oysters, your palate will be seduced.

Aging potential: 3 to 5 years


Pure white chenin with a golden yellow robe with a rich nose with aromas of candied pears, white flowers and cinnamon. The palate is smooth and persistent with a remarkably fresh and harmonious finish with flavors of orchard fruits.

Dare to serve it with scallops in risotto, white truffle and Norman perry emulsion.

Aging potential: from 15 to 20 years


Pure white chenin, Plot selection. it has a subtly intense nose with aromas of pineapple, grapefruit peels and crème fraîche. The mouth is dense with a nice minerality and a slightly honeyed finish.

The lobster seared in yuzu butter will revive the freshness and mineral flavors of the wine.

Pure white chenin from a solar terroir of quartz, shale and clay. Wine with a golden yellow color with silver reflections. Intense nose of exotic fruits, hazelnuts and graphites.

The mouth is tender with a nice minerality with a severe and delicate finish.

Let us try the originality with Des Côtes de Cochon noir seized with bone and its anchovy butter.

Pure white chenin from a solar terroir of quartz, shale and clay. Wine with a crystalline yellow color with a nose combining finesse and intensity of autumn fruits, oyster shells and flintlock. The mouth is full, energetic with a subtle balance between power and delicacy of acacia honey and citrus.

Let's stay local, this wine can be served with a poached moss with bear's garlic and "carry goss" (Breton curry).

Aging potential: 10 to 15 years


Tender wine, made from Chenin bunches that have experienced passerillage. The color is golden with amber reflections.
Deep nose with aromas of pear, quince, brioche, gingerbread.

A Gamay, Negrette, Grolleau Gris and Pinot Noir blended wine with a raspberry red robe and a nose of fresh red fruit, with spicy nuances.

The mouth is full and delicious with a nice freshness with a slightly saline finish .

A salmon tartare, pomelo served with chive cream will enhance this Summer Range.

Pure pinot noir, iodized nose followed by tangy spices, and red fruits. Beautiful freshness on the palate, full of delicacy with flavors of forest fruits with flint accents with a long, slightly bitter and saline finish.

Serve it with jelly oysters accompanied by candied peppers.

A sweet rosé with a pomegranate red robe, a nose of stewed red fruit and Christmas spices The palate is delicious, fruity with a suave and digestible finish despite the amount of significant residual sugars.

This sol'air will sublimate a dessert around Guanaja dark chocolate and redcurrants.

A pure Gamay on schists with a ruby ​​color and raspberry reflections. The nose reveals notes of ripe redcurrants with a touch of white pepper.

The palate is light, juicy and crisp with a finish with silky tannins.

Pure negro, plot selection; Rich nose of wild red fruits, redcurrant and spicy notes. The palate is round, elegant and fruity with a finish with peppery flavors and a dense and velvety tannic material.

Perfect with a stew of deer, lingonberry jam.

Pure Cabernet Franc with aromas of roasted peppers, black olives and liquorice and with a fleshy mouth, with a racy finish with supple tannins .

Pair this wine with a boar terrine, green pepper and shallots.

Made mainly from the Pinot Noir grape variety blended with Gamay, Cabernet Franc and Negrette, this wine with a fruity nose of blackcurrant and undergrowth with light smoky notes. The mouth is invigorating, spicy and delicious, with a nice balance between fruity and spices.

With a smoked eel, rat potatoes and horseradish condiment, your palate will be pleasantly surprised.

Pure pinot noir, plot selection; Powerful and refined nose with aromas of prunes, tobacco, undergrowth with a minty touch. Concentrated, ripe, dense Pinot Noir with an astonishing wild side and a finish reminiscent of dried blue flowers. The tannins are deliciously smoky and in harmony with the wine.

An amazing marriage with Indian Cuisine such as a "Tika Korma" Chicken.

Pure pinot noir with subtle aromas of forest fruits, fresh cherry and dark chocolate. The wine is full of noble vegetal aromas and flavors of toasted almonds, leather revealing silky, melted tannins and a persistent finish.
